Estimar is the project of Anna Gotanegra and Chef Rafa Zafra: deep knowledge of the sea and the craft of the kitchen, brought together at one table.<\/p>\n<\/div><\/div>\n<\/div>\n<\/div>\n<\/div>\n\n

At the helm<\/b><\/h2>\n<\/div><\/div>\n\n

Anna <\/span><\/span><\/p>\n<\/div><\/div>\n\n

Anna Gotanegra is at the helm of Estimar. She did not inherit a restaurant: she created it. An entrepreneur and managing director of the Estimar Group, and the fifth generation of a family devoted to the sea since 1895, she founded Estimar to bring to the table the knowledge she grew up with.<\/p>\n

She trained where gastronomy truly begins: at the fish market, alongside her grandmother, her mother and her father, Pere Gotanegra. There, she learned to recognise species, seasons and quality, and to understand that a great restaurant begins long before you step into a kitchen.<\/p>\n

Today, she leads the project with a contemporary vision that brings together tradition, excellence and management. What her family gave her\u2014absolute respect for the sea\u2014is the foundation of everything Estimar does.<\/p>\n<\/div><\/div>\n<\/div>\n\n

Rafa<\/b><\/p>\n<\/div><\/div>\n\n

Rafa Zafra\u2019s cooking is rooted in respect. Respect for the product, for those who work with it, and for a way of understanding gastronomy where excellence needs no artifice.<\/p>\n

From his early days in Seville, he discovered that cooking was far more than a profession: a way of interpreting the world. His years alongside Ferran and Albert Adri\u00e0 in the elBulli universe shaped his way of thinking, teaching him to look at every ingredient with curiosity, precision and a constant search for its essence.<\/p>\n

Over time, he developed his own identity: a cuisine where technique serves flavour and the product is always the protagonist. His cooking seeks to accompany the product, not transform it, and to enhance what the sea has already created. <\/p>\n<\/div><\/div>\n\n
