Anna Gotanegra porta el tim\u00f3 d\u2019Estimar. No va heretar un restaurant: el va crear. Empres\u00e0ria i gerent del grup Estimar, cinquena generaci\u00f3 d\u2019una fam\u00edlia dedicada al mar des del 1895, va crear Estimar per portar a taula el coneixement amb qu\u00e8 es va criar. <\/p>\n

Es va formar on realment comen\u00e7a la gastronomia: a la llotja, al costat de la seva \u00e0via, la seva mare i el seu pare, Pere Gotanegra. All\u00e0 va aprendre a recon\u00e8ixer esp\u00e8cies, temporades i qualitats, i a entendre que un gran restaurant comen\u00e7a molt abans d\u2019entrar en una cuina. <\/p>\n

Avui dirigeix el projecte amb una visi\u00f3 contempor\u00e0nia que uneix tradici\u00f3, excel\u00b7l\u00e8ncia i gesti\u00f3. El que la seva fam\u00edlia li va donar \u2014el respecte absolut pel mar\u2014 \u00e9s la base de tot el que fa Estimar. <\/p>\n<\/div><\/div>\n<\/div>\n\n

La cuina de Rafa Zafra neix del respecte. Respecte pel producte, per qui el treballa i per una manera d\u2019entendre la gastronomia on l\u2019excel\u00b7l\u00e8ncia no necessita artificis. <\/p>\n

Des dels seus inicis a Sevilla va descobrir que la cuina era molt m\u00e9s que una professi\u00f3: una manera d\u2019interpretar el m\u00f3n. Els seus anys al costat de Ferran i Albert Adri\u00e0 a l\u2019univers d\u2019elBulli van marcar la seva manera de pensar, ensenyant-li a mirar cada ingredient des de la curiositat, la precisi\u00f3 i la recerca constant de l\u2019ess\u00e8ncia. <\/p>\n

Amb el temps va desenvolupar una identitat pr\u00f2pia: una cuina on la t\u00e8cnica est\u00e0 al servei del sabor i on el protagonista sempre \u00e9s el producte. La seva cuina busca acompanyar el producte, no transformar-lo, i real\u00e7ar all\u00f2 que el mar ja ha creat. <\/p>\n<\/div><\/div>\n\n
